Lemak Lodeh Sambal Tumis


Lemak Lodeh is perfect for family gathering, a dish popularly eaten on festive occasions like Hari Raya. This dish is essentially rice cakes (lontong) soaked in thick curried vegetable gravy. Recipe for Sambal Tumis
Ingredients for Sambal Tumis:
  • 1/2 tbsp tamarind
  • 50ml water
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 50ml cooking oil
  • 100g dried chillies
  • 4 purple onions
  • 1 garlic clove
  • 2.5cm thick piece of balacan
Method:
  1. Grind the chillies, onions, clove and belacan to get a chilli paste.
  2. Mix tamarind with water. Strain and reserve.
  3. Heat oil over low heat. Fry the chilli paste for about 20 minutes until fragrant or until the oil surfaces.
  4. Add the tamarind juice.
  5. Season with sugar and salt.
Recipe for Lemak Lodeh (Vegetable Curry)
For Vegetable Curry:
  • 100g cabbage, cut into 5cm by 5cm pieces
  • 6 stalks of long beans, cut into 5cm pieces
  • Half of jicama (bang kwang), sliced like french fries
  • 2 bunch of dried glass noodles
  • 500ml fresh coconut milk
Spice Paste for Vegetable Curry:
  • 3 purple onions
  • 2 garlic cloves
  • 50g dried shrimp (or udang gragaw)
  • 2.5cm thick of turmeric
  • 2.5cm thick piece of balacan
  • 3 fresh red chillies (or 2 tbsp of dried chilli paste)
Method:
  1. Grind the spice paste.
  2. Heat  over low heat. Fry spice paste until fragrant.
  3. Add the coconut milk, glass noodles and the vegetables.
  4. Simmer for 10-15 minutes.
